  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss trimmed asparagus with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 15 minutes until crispy.
  3. While asparagus roasts, season chicken with oregano, garlic powder, salt, and pepper.
  4. Heat a pan over medium-high heat with a drizzle of olive oil. Cook chicken for 5-6 minutes per side until golden and cooked through. Let rest before slicing.
  5. Cook pasta al dente according to package instructions. Reserve a splash of pasta water.
  6. In a bowl, mix crumbled feta, heavy cream, and harissa paste until smooth to create the spicy harissa feta sauce. Add a teaspoon of reserved pasta water if the sauce is too thick.
  7. Combine the cooked pasta, sliced chicken, and the spicy harissa feta sauce.
  8. Serve the zesty Greek chicken pasta topped with the crispy roasted asparagus.
