- 4 large russet potatoes (peeled and cut into cubes)
- 4 tablespoons unsalted butter
- ½ cup sour cream
- 1 cup shredded cheddar cheese (plus more for topping)
- ¼ cup milk (or more for desired consistency)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh chives or green onions for garnish (optional)
Instructions
- In a large pot, bring water to a boil and add cubed russet potatoes. Boil for 12–15 minutes until fork-tender.
- Drain the potatoes and return them to the pot. Add butter, sour cream, garlic powder, salt, and pepper. Mash until smooth, adding milk gradually to reach desired consistency.
- Stir in shredded cheddar cheese until it melts and the mixture becomes creamy.
- Transfer mashed potatoes to a greased baking dish and smooth the top with a spatula. Sprinkle with additional cheese for a cheesy crust.
- Preheat your oven to 375°F (190°C). Bake for 15–20 minutes, or until the top is golden and bubbly.
- Remove from the oven, garnish with fresh chives or green onions, and serve immediately as a decadent side dish.
