- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 2 cups kale or spinach
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon lemon juice (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sauté onion, carrots, and celery until softened.
- Add minced garlic, thyme, and rosemary, and cook until fragrant.
- Stir in diced tomatoes and white beans, mixing well.
- Pour in vegetable broth and add bay leaf, then bring to a gentle boil.
- Reduce heat and let the soup simmer for 25–30 minutes.
- Add kale or spinach and cook until wilted.
- Season with salt, pepper, and lemon juice.
- Remove bay leaf and serve hot with Parmesan cheese if desired.
