Ingredients

  • 1 pound broccoli, cut into florets and stems
  • 34 cloves garlic, peeled and smashed
  • 4 cups chicken broth (or vegetable broth or water)
  • 2 cups water
  • 1 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • 3/4 cup orzo or ditalini pasta
  • Grated Parmesan cheese
  • Extra virgin olive oil

Instructions

  1. Add the broccoli, chicken broth, water, kosher salt, black pepper, and smashed garlic cloves to a large soup pot or Dutch oven. Bring the mixture to a boil, then reduce heat, cover, and simmer for 30 minutes.
  2. Carefully smash the cooked broccoli using a potato masher, or pulse with an immersion blender. Ensure not to blend until completely smooth; leave some larger and smaller pieces of broccoli to maintain a pleasant texture.
  3. Stir in the orzo or ditalini pasta. Continue to cook, uncovered, for 15 minutes, or until the pasta is tender. Stir frequently to prevent the pasta from sticking to the bottom of the pot.
  4. Stir in the ground nutmeg, if using. Taste the soup and adjust seasonings as needed. Serve immediately, garnished with grated Parmesan cheese and additional freshly ground black pepper, if desired.
