Description

Savory Homemade Vegan Salami delivers a delicious plant-based take on a classic savory treat, perfect for any occasion.

Ingredients

Scale
  • 1 cup Vital Wheat Gluten (Substitute with chickpea flour for gluten-free option.)
  • 1 cup Low-Sodium Vegetable Broth (Can be replaced with water.)
  • 2 tablespoons Tomato Paste (Sun-dried tomatoes make a great alternative.)
  • 2 tablespoons Avocado Oil (Any vegetable oil can also be substituted.)
  • 2 tablespoons Soy Sauce (Use tamari for gluten-free alternative.)
  • 1 teaspoon Liquid Smoke (Can be omitted if unavailable.)
  • 1 teaspoon Smoked Paprika (Regular paprika can be used if necessary.)
  • 1 teaspoon Garlic Powder (Feel free to use fresh garlic for more flavor.)
  • 1 teaspoon Onion Powder (Fresh onions can also be used.)
  • 1 teaspoon Fennel Seeds (Anise seeds can be substituted.)
  • 1 teaspoon Dried Oregano (Fresh herbs can work well too.)
  • 1 teaspoon Dried Parsley (Fresh herbs can also be used.)
  • 1/2 teaspoon Black Pepper (Adjust according to your spice preference.)
  • 1/2 teaspoon Chili Flakes (Can be omitted for a milder flavor.)
  • 1 teaspoon Sea Salt (Opt for low-sodium versions for heart health.)

Instructions

  1. In a large bowl, stir together the vital wheat gluten with the smoked paprika, garlic powder, onion powder, fennel seeds, sea salt, dried oregano, parsley, black pepper, and chili flakes until well mixed.
  2. In a separate bowl, whisk together the low-sodium vegetable broth, tomato paste, avocado oil, soy sauce, and liquid smoke until smooth.
  3. Gradually pour the wet mixture into the dry ingredients, stirring as you go. Mix until a rough dough forms, then knead gently for about 5 minutes until elastic.
  4. On a floured surface, divide the dough in half and form into two logs. Wrap each log tightly in aluminum foil, securing the ends.
  5. Bring water to a boil in a pot, place the foil-wrapped logs in a steaming basket, cover, and steam for 30-40 minutes until firm.
  6. Allow logs to cool completely before unwrapping. Slice to desired thickness and serve fresh, or store for later use.

Notes
