  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 large ripe avocado
  • 1 cup (100g) vegan cheese shreds (e.g., Daiya or Follow Your Heart)
  • ¼ cup finely chopped red onion
  • 1 clove garlic, minced
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil or avocado oil
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, mash the avocado with lime juice, salt, and pepper until creamy but still a bit chunky. Add the drained black beans, minced garlic, red onion, cumin, smoked paprika, chili powder, and chopped cilantro. Mix gently to avoid mashing the beans too much. Taste and adjust seasoning.
  2. Place a non-stick skillet or cast iron pan over medium heat and add about half a tablespoon of oil. Let it warm until shimmering but not smoking.
  3. Lay one tortilla flat on a plate or cutting board. Spread half the bean and avocado mixture evenly over half the tortilla. Sprinkle a generous handful of vegan cheese on top of the filling. Fold the tortilla over, pressing gently to seal.
  4. Transfer the quesadilla to the hot pan. Cook until golden brown and crispy on one side, about 4-5 minutes. Flip carefully and cook the other side until golden and the cheese has melted.
  5. Transfer the cooked quesadilla to a cutting board and let it rest for 1-2 minutes. Repeat with the second tortilla and remaining filling.
  6. Cut each quesadilla into 3-4 wedges. Serve with lime wedges, salsa, vegan sour cream, or your favorite hot sauce.
