- 250 grams Oyster Mushrooms (Shredded)
- 1 tablespoon Sugar (Optional; enhances caramelization)
- 2 tablespoons White Wine or Lemon Juice (Adds acidity)

- 1 teaspoon Fresh Thyme (Leaves only)
- 1 teaspoon Coriander
- 1 teaspoon Cumin
- 1 teaspoon Paprika (Sweet or smoked)

- 1 teaspoon Oregano (Dried)
- 1 pinch Cinnamon
- 1 pinch Ground Cloves
- 1 teaspoon Chili Powder (Adjust to taste)
- 4 pieces Flatbreads (Pita bread)
- 1 cup Vegan Tzatziki Sauce
- 1 cup Sliced Cucumbers
- 1 cup Tomatoes (Sliced)
- 1 small Red Onion (Sliced or scallions)
- 2 tablespoons Fresh Dill (For garnish)
- 2 cups Fries (For side)
- 1 cup Hummus (Optional side)
Instructions
- In a small bowl, whisk together all the gyros spices until combined. Store in a spice jar for later use.
- Heat a medium heavy-bottom pan and drizzle lightly with olive oil. Cook the sliced onion with a pinch of salt until translucent, then stir in the sugar and cover. Continue cooking on medium-low until caramelized, checking often.
- Once the onions are beautifully caramelized, transfer them to a bowl and set aside.
- Shred the oyster mushrooms into thin strips and add them to the skillet with the reserved onions. Increase heat, add white wine or lemon juice, then stir in fresh thyme and cook until wilted.
- Mix in 3 teaspoons of the prepared gyros seasoning. Cook until moisture evaporates, stirring frequently. Taste and adjust seasoning if needed.
- Transfer the mushroom filling to a broiler-proof dish, spritz with olive oil, and broil until edges are crisp. Mix in caramelized onions.
- Preheat pita breads in the microwave, under the broiler, or in a dry skillet until warm.
- Fold the warm pita into a cone shape and wrap with butcher paper.
- Load the pita with the vegan filling, then top with cucumber slices, tomatoes, and vegan tzatziki sauce. Finish with fresh dill and red onions.
