Description

Ingredients

  • 1 packet Active Dry Yeast (or instant yeast)
  • 1 cup Warm Water (comfortably warm)
  • 1 tablespoon Sugar (can substitute with agave or maple syrup)
  • 3 cups All-Purpose Flour (or gluten-free flour blend)
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil (can swap with melted coconut oil)
  • 2 medium Onions (preferably yellow or white)
  • 2 cloves Garlic (minced)
  • 4 cups Fresh Spinach (to prevent sogginess)
  • 1 teaspoon Dried Oregano (or Italian seasoning)
  • 1/2 teaspoon Red Pepper Flakes (optional)
  • 1 cup Marinara Sauce (consider low-sugar options)
  • 1/4 cup Nutritional Yeast (optional)

Instructions

  1. In a small bowl, combine the active dry yeast, warm water, and sugar. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, mix the all-purpose flour and salt. Add the yeast mixture and olive oil, and knead for 8-10 minutes until smooth.
  3. Cover the dough with a towel and allow to rise for 1 hour, or until doubled in size.
  4. In a skillet, heat olive oil over medium-low heat, add sliced onions, and cook for 15-20 minutes until golden brown.
  5. Stir in minced garlic, fresh spinach, dried oregano, and red pepper flakes. Cook for 2-3 minutes until spinach wilts.
  6. Preheat your oven to 375°F (190°C). Roll out the risen dough into a rectangle and spread marinara sauce over it.
  7. Top with the onion-spinach mixture, roll tightly into a log, and cut into 10-12 equal pieces.
  8. Place rolls in a greased baking dish, sprinkle nutritional yeast if desired, and bake for 25-30 minutes until golden.
  9. Let cool for 5 minutes and serve warm with extra marinara for dipping.
