Description
Unstuffed Cabbage Soup with Middle Eastern flavors. A simple one-pot meal ready in 40 minutes.
Ingredients

- 2 tbsp olive oil
- 1 yellow onion (chopped)
- 4 cloves garlic (minced)
- 1/2 lb ground beef
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1/4 tsp cinnamon
- 1 tbsp dried mint
- 1 tsp kosher salt (more to taste)
- 1/2 tsp black pepper
- 2 tbsp tomato paste
- 1 can diced tomatoes (15 oz)
- 1/2 cup short-grain rice (Egyptian rice or Arborio)
- 1/4 large cabbage (roughly chopped)
- 6 cups water or broth
- Juice of 1 lemon
- 1/2 cup chopped parsley
Instructions
- Heat olive oil in a large pot over medium-high heat. Saute the onion and garlic until softened, about 4 minutes.
- Add in minced garlic and cook for a minute.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Stir in turmeric, cumin, paprika, cinnamon, dried mint, salt, and pepper. Cook for 1 to 2 minutes until fragrant.
- Add tomato paste and cook for 1 to 2 minutes, stirring well.
- Add diced tomatoes, short grain rice, chopped cabbage, and water or broth. Stir to combine.
- Bring to a boil, then reduce to a low simmer. Cover and cook for 30 to 40 minutes, stirring occasionally, until the rice is tender and the cabbage is fully cooked.
- Stir in lemon juice and parsley. Taste and adjust salt before serving.
