Instructions
- In a large baking tray, combine sour cream, Turkish pepper paste, paprika, chili flakes, dried mint, oregano, cumin, and half of the olive oil to form a thick marinade.
- Add the cubed beef into the marinade, mixing until every piece is thoroughly coated. Season with salt and pepper.
- Form the marinated beef into a disc shape in the center of the tray. Surround it with garlic, red onion, butternut squash, eggplant, zucchini, tomato, and green chili.
- Cover the tray and refrigerate for at least 2-4 hours to allow the flavors to meld.
- Preheat your oven to 350°F (175°C). Drizzle the remaining olive oil over the contents, ensuring everything is well-coated.
- Cover the tray with parchment paper and then foil. Bake covered for 1 hour to lock in moisture.
- After 1 hour, remove the foil and parchment paper. Bake uncovered for another 25 minutes, or until the beef is golden brown and vegetables are tender.
- Optional: Garnish with fresh herbs before serving for extra flavor.
