A refreshing and hearty twist on the classic Caesar salad, combining cheese tortellini, crisp romaine, and vibrant flavors into a filling meal perfect for any occasion.
Ingredients

- 1 large bag cheese tortellini (~510 g)
- 2 small heads romaine lettuce (thinly sliced)
- 1 (15 oz) can chickpeas (drained & rinsed)
- 1 pint cherry tomatoes (halved)
- 1/2 cup red onion (thinly sliced)
- 1 cup shaved parmesan cheese
- 1 cup croutons (or more)
- 1 cup Caesar dressing
- Juice of 1/2 lemon
- 1/4 cup fresh basil (or herbs of choice)
- Salt & black pepper (to taste)
Instructions
- Boil the tortellini according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process; let it cool slightly.
- In a large bowl, add the cooked tortellini, drained chickpeas, halved cherry tomatoes, thinly sliced red onion, sliced romaine lettuce, shaved parmesan, and croutons.
- Pour Caesar dressing over the salad and add the juice of 1/2 lemon. Toss everything together until well coated.
- Fold in the fresh basil (or herbs of choice). Season with salt and black pepper to taste.
- Mix well, taste, and adjust seasoning if needed. Serve immediately.
