Ingredients

Scale
  • 1 turkey (12-14 lbs)
  • 4 cups stuffing mix
  • 2 cups chicken broth
  • 1/2 cup butter, softened
  • 6 Russet potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 2 tbsp butter
  • 2 cups fresh green beans, trimmed
  • 1/2 cup sliced almonds
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 325°F.
  2. Pat the turkey dry and season generously inside and out with salt, pepper, and herbs.
  3. Mix stuffing with warm chicken broth and softened butter until moist.
  4. Gently stuff the turkey cavity.
  5. Roast the turkey uncovered for 3-4 hours, basting every 45 minutes.
  6. Check the turkey’s internal temperature; it should reach 165°F in the thickest part of the thigh.
  7. Let the turkey rest for 30 minutes before carving.
  8. While the turkey rests, boil the cubed potatoes in salted water until fork-tender (15-20 minutes).
  9. Drain the potatoes well and mash with warmed milk and butter. Season with salt and white pepper. Keep warm.
  10. Heat olive oil in a large skillet over medium-high heat.
  11. Sauté green beans for 5 minutes until bright green with some brown spots.
  12. Add almonds during the last 2 minutes of sautéing. Finish with flaky salt.
  13. Arrange the buffet: Turkey in the center, mashed potatoes and green beans with sides, stuffing in a basket, and utensils/napkins at the end.

Notes

  • Thaw your turkey in the refrigerator for 2-3 days prior to cooking.
  • Use a meat thermometer to ensure the turkey reaches a safe internal temperature of 165°F.
  • Taste and adjust seasonings as needed throughout the cooking process.
  • Vegetable broth can be substituted for chicken broth.
  • Pecans or walnuts can be used instead of almonds for the green beans.
  • Yukon Gold potatoes can be used for mashed potatoes if Russets are unavailable.
  • Margarine can be used as a substitute for butter in a pinch.
