Instructions
- Peel the green papaya, remove seeds, and shred into thin strips.
- In a mortar and pestle, pound garlic and Thai chilies into a rough paste. Add palm sugar and mash until it dissolves.
- Stir in fish sauce and lime juice to create the dressing.
- Toss the green beans and cherry tomatoes in the dressing, gently bruising them.
- Fold the shredded papaya into the salad, ensuring it’s coated with the dressing.
- Top with roasted peanuts and optional dried shrimp. Adjust flavor as desired.
