- 4 cups green papaya, shredded
- 1 cup carrot, shredded
- 1 red bell pepper, thinly sliced
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 to 2 Thai chilies, finely chopped
- 3 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1/3 cup roasted peanuts, chopped
Instructions
- Peel the green papaya, remove the seeds, and shred it into thin strips.
- Shred the carrot, slice the red bell pepper, and chop the green onions and cilantro.
- Add the papaya, carrot, bell pepper, green onions, and cilantro to a large mixing bowl.
- In a small bowl, whisk together the garlic, Thai chilies, lime juice, fish sauce, and brown sugar until the sugar dissolves.
- Pour the dressing over the vegetables and toss well until everything is evenly coated.
- Let the salad sit for 5 minutes so the flavors can blend.
- Top with chopped roasted peanuts and serve immediately.
