- 1 zucchini, grated and squeezed dry
- 2 carrots, finely grated
- 1 large egg
- 1/2 cup breadcrumbs
- 1 teaspoon paprika
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried parsley

Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Grate the zucchini and carrots, squeezing the zucchini to remove excess moisture.
- In a large mixing bowl, combine ground turkey, egg, grated zucchini, grated carrots, breadcrumbs, and spices. Mix gently until just combined.
- Scoop about 2 tablespoons of the mixture and roll into nugget shapes. Place on the prepared baking sheet with about an inch of space between them.
- Bake the nuggets for 8 minutes, then flip and bake for another 8 minutes until golden brown.
- Remove the nuggets from the oven and let them cool on the baking sheet for 2-3 minutes before serving warm.
