  • 1 zucchini, grated and squeezed dry
  • 2 carrots, finely grated
  • 1 large egg
  • 1/2 cup breadcrumbs

  • 3/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried parsley

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Grate the zucchini and carrots, squeezing the zucchini to remove excess moisture.
  3. In a large mixing bowl, combine ground turkey, egg, grated zucchini, grated carrots, breadcrumbs, and spices. Mix gently until just combined.
  4. Scoop about 2 tablespoons of the mixture and roll into nugget shapes. Place on the prepared baking sheet with about an inch of space between them.
  5. Bake the nuggets for 8 minutes, then flip and bake for another 8 minutes until golden brown.
  6. Remove the nuggets from the oven and let them cool on the baking sheet for 2-3 minutes before serving warm.
