- 2 boneless chicken breasts
- 1 cup salsa
- 1 cup canned black beans, drained
- 1 cup corn
- 1 packet taco seasoning
- 1/2 cup chicken broth
- 2 cups cooked rice (400g)
- 1 cup shredded cheese
- Optional toppings: avocado, cilantro, lettuce, tomatoes
Instructions
- Place chicken breasts in the crockpot. Add salsa, black beans, corn, taco seasoning, and chicken broth.
- Cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
- Shred chicken directly in the crockpot and mix with sauce.
- Cook rice according to package instructions.
- Add rice to a bowl, top with taco chicken, sprinkle cheese, and add desired toppings.
- Serve warm and enjoy.
