  • ½ cup plain breadcrumbs
  • ½ cup whole milk

  • ½ teaspoon fresh cracked black pepper
  • 20 ounces pineapple chunks, drained (reserve juice)
  • ¾ cup BBQ sauce
  • ½ cup sweet chili sauce
  • ½ cup light brown sugar, packed
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons soy sauce
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a 9×13 inch baking dish with nonstick spray.
  2. In a large bowl, combine ground beef, diced onion, breadcrumbs, milk, beaten eggs, salt, and pepper. Mix until just combined.
  3. Shape the meat mixture into uniform meatballs using a 1½-tablespoon scoop. Place them in the prepared baking dish.
  4. In a medium bowl, whisk together reserved pineapple juice, BBQ sauce, sweet chili sauce, brown sugar, apple cider vinegar, soy sauce, and cornstarch until smooth.
  5. Distribute pineapple chunks over the meatballs. Pour the sauce evenly over the meatballs.
  6. Bake uncovered for 45 minutes, or until meatballs are cooked through and sauce has thickened.
  7. Serve hot, ideally over rice.
