- 2 to 3 large sweet potatoes, peeled and cut into 1/2-inch cubes
- Olive oil or coconut oil cooking spray
- Salt
- Freshly ground black pepper
- 2/3 cup crumbled goat cheese
- 1/4 cup fresh sage, finely chopped
Instructions
- Preheat your oven to 400°F. Line a large baking sheet with parchment paper or lightly coat it with cooking spray. Spread the 1/2-inch cubed sweet potatoes in a single layer on the prepared baking sheet. Lightly mist the potatoes with cooking spray and season generously with salt and freshly ground black pepper. Roast for approximately 30 minutes, turning them every 10 minutes, until the sweet potatoes are tender and lightly caramelized.
- Once roasted, portion the sweet potatoes into individual 1/2-cup servings. For each serving, sprinkle with 2 1/2 tablespoons of crumbled goat cheese and 1 tablespoon of fresh, finely chopped sage. Serve warm as a flavorful side dish.
