Description

Decadent and easy-to-make sweet potato cheesecake bars with a graham cracker crust.


Ingredients

  • 1½ cups graham cracker crumbs
  • 5 tablespoons butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup mashed sweet potato
  • ½ cup packed brown sugar
  • 1 large egg
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • ¼ cup heavy cream

Instructions

  1. In a medium bowl, combine 1½ cups graham cracker crumbs, 5 tablespoons melted butter, and 2 tablespoons granulated sugar. Mix until crumbs are moistened and resemble wet sand. Press mixture firmly and evenly into the bottom of a parchment-lined 8×8 inch baking pan. Bake at 350°F (175°C) for 8-10 minutes until lightly golden brown. Let cool slightly.
  2. In a large bowl, beat 16 ounces softened cream cheese with ½ cup granulated sugar until smooth. Add 2 large eggs one at a time, beating well after each. Stir in 1 teaspoon vanilla extract and ½ cup sour cream. Mix until just combined.
  3. In a separate small bowl, whisk together 1 cup mashed sweet potato, ½ cup packed brown sugar, 1 large egg, ½ teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon allspice. Gently fold this mixture into the cream cheese mixture until just combined, allowing for streaks.
  4. Pour the sweet potato cheesecake filling evenly over the pre-baked crust. Spread smoothly. Gently pour ¼ cup heavy cream over the top. Bake at 350°F (175°C) for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  5. Let the bars cool completely on a wire rack. Cover loosely and refrigerate for at least 4 hours, or preferably overnight, to firm up and develop flavor. Lift out of the pan using parchment overhang and cut into bars with a sharp knife.
