Description

Ingredients

  • 625 g heavy cream
  • 250 g whole milk
  • 130 g granulated sugar
  • 2 Tahitian vanilla beans (split, seeds scraped) or 2 tsp vanilla paste
  • 2 tsp corn starch (dissolved in 12 tbsp cold milk)
  • 1/4 tsp fine salt
  • 500 g strawberries, cleaned and left whole
  • 45 g granulated sugar (for roasting berries)
  • 7 g vanilla paste (or 1/2 vanilla bean equivalent)
  • 2 tsp good-quality balsamic vinegar
  • 35 g basil leaves, tightly packed
  • Juice of limes (about 23 tbsp)
  • 2 tbsp Demerara sugar (for the basil-lime syrup)
  • 1 tbsp extra-virgin olive oil (optional, for roasting)

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking tray with parchment.
  2. Toss the strawberries with sugar, vanilla paste, balsamic, and olive oil. Spread in a single layer and roast for 18–25 minutes until softened and slightly caramelized. Let cool; reserve juices.
  3. Prepare the vanilla base: warm heavy cream, whole milk, sugar, vanilla beans, and salt until tiny bubbles form at the edge (do not boil).
  4. Dissolve the cornstarch into cold milk to make a slurry. Temper: remove hot milk, whisk into the slurry, then pour back into saucepan, stirring constantly. Return to low simmer for 1–2 minutes until thick.
  5. Chill the custard quickly in an ice bath, stirring occasionally until under 5°C, or chill overnight.
  6. Make the sweet lime-basil syrup: bruise basil with Demerara sugar and lime juice in a mortar, or blitz briefly in a blender.
  7. Churn the chilled custard in an ice-cream maker until thick but still soft.
  8. Layer ice cream, roasted strawberries (and juices), and basil-lime syrup in a container, swirling gently. Freeze for 4–6 hours until firm.
