- 1 lb (450 g) ground beef (or ground turkey)
- 3 large bell peppers (diced)
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup cooked rice (white or brown)
- 1 can (14 oz / 400 g) diced tomatoes, drained slightly
- 1 cup tomato sauce
- 1 ½ cups shredded cheese (cheddar, mozzarella, or mix)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp oregano (optional)
- ½ cup corn
- ½ cup black beans
- ¼ tsp chili flakes for heat
Instructions
- Preheat the oven
- Set oven to 375°F (190°C).
- Lightly grease a 9×13 inch baking dish.
- Heat a skillet over medium heat.
- Cook ground beef until browned.
- Add onion and cook 3–4 minutes until soft.
- Stir in garlic and cook 1 minute more.
- Drain excess fat if needed.
- Add diced bell peppers, tomatoes, and tomato sauce.
- Stir in salt, pepper, paprika, Italian seasoning, and oregano.
- Simmer for 5 minutes until slightly thickened.
- Add cooked rice to the mixture.
- Stir until evenly combined.
- Transfer mixture to prepared baking dish.
- Spread evenly.
- Sprinkle shredded cheese on top.
- Bake uncovered for 30–35 minutes until cheese is melted and bubbly.
- Let casserole rest 5 minutes before serving.
- Garnish with fresh parsley if desired.
