  • 3 large bell peppers (diced)
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup cooked rice (white or brown)
  • 1 can (14 oz / 400 g) diced tomatoes, drained slightly
  • 1 cup tomato sauce
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or mix)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp oregano (optional)
  • ½ cup corn
  • ½ cup black beans
  • ¼ tsp chili flakes for heat

Instructions

  1. Preheat the oven
  2. Set oven to 375°F (190°C).
  3. Lightly grease a 9×13 inch baking dish.
  4. Heat a skillet over medium heat.
  5. Cook ground beef until browned.
  6. Add onion and cook 3–4 minutes until soft.
  7. Stir in garlic and cook 1 minute more.
  8. Drain excess fat if needed.
  9. Add diced bell peppers, tomatoes, and tomato sauce.
  10. Stir in salt, pepper, paprika, Italian seasoning, and oregano.
  11. Simmer for 5 minutes until slightly thickened.
  12. Add cooked rice to the mixture.
  13. Stir until evenly combined.
  14. Transfer mixture to prepared baking dish.
  15. Spread evenly.
  16. Sprinkle shredded cheese on top.
  17. Bake uncovered for 30–35 minutes until cheese is melted and bubbly.
  18. Let casserole rest 5 minutes before serving.
  19. Garnish with fresh parsley if desired.
