- 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
- 2 tbsp olive oil divided
- 1 tsp chili powder for chicken
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika

- 2 cups corn kernels fresh, frozen, or canned and drained
- 2 tbsp mayonnaise
- 1/4 cup cotija cheese crumbled or substitute feta
- 1 tbsp fresh lime juice
- 1/2 tsp chili powder for street corn
- 1/4 cup fresh cilantro chopped
- 2 cups cooked white rice or brown rice
- 1 can black beans 15 oz rinsed and drained
- 1 ripe avocado sliced
Instructions
- Season the chicken with chili powder, cumin, garlic powder, paprika, salt, and pepper in a large bowl, tossing to coat evenly. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
- Add the seasoned chicken to the hot skillet and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through, internal temperature should reach 165°F. Transfer chicken to a plate and set aside.
- Heat the remaining tablespoon of olive oil in the same skillet over medium heat. Add corn kernels and cook for 3-4 minutes, stirring frequently, until lightly charred and tender.
- Remove the skillet from heat and stir in mayonnaise, lime juice, and chili powder until the corn is well coated. Add the crumbled cotija cheese and half the cilantro, mixing gently to combine.
- Return the cooked chicken to the skillet with the street corn mixture and toss everything together so the residual heat warms the chicken through without overcooking it.
- Assemble the bowls by dividing the cooked rice among four serving bowls. Top each with a portion of black beans, then spoon the chicken and street corn mixture over the top.
- Finish each bowl with sliced avocado and the remaining fresh cilantro. Serve immediately with extra lime wedges on the side for an extra burst of citrusy brightness.
