These Strawberry Oatmeal Bars combine a buttery oat crust with a sweet and tangy strawberry filling, creating a delicious and wholesome dessert perfect for any occasion.

- 4 cups whole strawberries, washed, hulled, and diced
- ⅔ cup granulated sugar
- Juice from half of a lemon (about 1 ½ tablespoons)
- ⅓ cup corn starch
- 2 cups old fashioned rolled oats
- 2 cups all-purpose flour
- 1 ½ teaspoons cinnamon
- 14 tablespoons unsalted butter, room temperature
- ½ teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F (177°C). Spray a 9×13-inch baking pan with nonstick spray and set aside.
- In a large bowl, combine the diced strawberries and granulated sugar. Allow them to sit for 10 minutes.
- Add the lemon juice and cornstarch to the strawberries, stirring well to combine.
- In a stand mixer, combine the rolled oats, all-purpose flour, cinnamon, butter, salt, and vanilla extract. Mix on low speed until the butter is evenly incorporated.
- Press two-thirds of the oat mixture into the bottom of the prepared baking pan. Spread the strawberry filling over this crust layer.
- Sprinkle the remaining oat mixture over the strawberry layer, pressing some into clusters.
- Bake for 35 to 40 minutes, or until the top turns golden brown. Allow the bars to cool completely before cutting into squares.
