- 2 cups fresh strawberries, sliced
- 2 cups mini marshmallows
- 1 package (3 oz) strawberry gelatin mix
- 1 cup boiling water
- 1 cup cottage cheese
- 2 cups whipped topping
- 1 cup crushed pineapple, drained
- 2 tablespoons powdered sugar (optional)
- 1 teaspoon vanilla extract
Instructions
- Wash, hull, and slice the strawberries into bite-sized pieces. Let them drain well.
- Dissolve the strawberry gelatin in 1 cup boiling water and stir until fully dissolved. Let it cool to room temperature.
- In a large mixing bowl, stir the cottage cheese until smoother in texture.
- Fold in the whipped topping and vanilla extract gently until combined.
- Add the sliced strawberries and well-drained crushed pineapple, then fold carefully.
- Add the mini marshmallows and mix gently so they are evenly distributed.
- Pour in the cooled gelatin mixture and fold until the salad is evenly pink and fluffy.
- Cover and refrigerate for at least 2 hours before serving. Stir gently before serving if needed.
