- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
- 2 1/2 cups heavy whipping cream, cold
- 3/4 cup powdered sugar
- 3 cups fresh strawberries, hulled and sliced
- 1 cup fresh whole strawberries for topping
- 1 1/2 cups shredded coconut, optional
Instructions
- Preheat the oven to 350°F and grease two 8-inch round cake pans. Line the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Add the dry ingredients in batches, alternating with the milk, and mix just until combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack and let them cool completely.
- In a chilled bowl, beat the heavy whipping cream with the powdered sugar until medium peaks form.
- Place one cake layer on a serving plate and spread a thick layer of whipped cream over the top.
- Arrange the sliced strawberries evenly over the whipped cream.
- Place the second cake layer on top and frost the top and sides with the remaining whipped cream.
- Press shredded coconut onto the sides if using, then decorate the top with whole strawberries.
- Chill the cake for at least 1 hour before slicing and serving.
