Description

  • 1 to pounds salmon filet
  • Salt and pepper, to taste
  • ½ cup balsamic vinegar
  • ¼ cup honey
  • ½ tablespoon olive oil
  • ¼ cup minced red onion
  • ½ cup quartered strawberries
  • 4 cups prepared white or brown rice
  • 1 pound broccoli, steamed or roasted
  • 12 ounces (about 8 cups) mixed baby greens
  • ½ cup sliced strawberries
  • ¼ cup thinly sliced red onion
  • ¼ cup chopped nuts (roasted pistachios, toasted pecans or pine nuts, sliced almonds, etc.)
  • ¼ cup shredded parmesan cheese
  • ½ cup Strawberry Poppyseed Dressing or your favorite poppyseed or other dressing

Instructions

  1. Season the salmon filet with salt and pepper on both sides and place it in a plastic storage bag or flesh side down in a shallow pan.
  2. In a small bowl, whisk together the balsamic vinegar and honey. Pour approximately ¼ cup of this mixture over the salmon, ensuring it is well coated. Seal the bag or cover the pan and marinate in the refrigerator for 15 to 30 minutes. Reserve the remaining honey-balsamic mixture for the glaze.
  3. While the salmon marinates, heat olive oil in a large skillet over medium heat. Add the minced red onion and season with salt and pepper. Cook for about 3 minutes until the onion softens. Reduce the heat to low and add the reserved honey-balsamic mixture to the skillet. Let it reduce until thick and syrupy. Stir in the quartered strawberries and cook for 1 to 2 minutes more until the strawberries are glazed.
  4. Preheat your oven’s broiler. Line a broiler pan or sheet pan with aluminum foil for easy cleanup. Place the marinated salmon on the pan and season again with salt and pepper if desired.
  5. Broil the salmon for 10 to 12 minutes until it is nearly cooked through and reaches an internal temperature of about 125°F. The edges should start to look cooked but the center should remain slightly translucent.
  6. Spoon the strawberry balsamic glaze evenly over the salmon. Return the pan under the broiler and cook for an additional 5 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  7. Serve the glazed salmon over prepared white or brown rice with steamed or roasted broccoli for a hearty meal, or create a fresh salad bowl by combining mixed baby greens, sliced strawberries, red onion, chopped nuts, parmesan cheese, and strawberry poppyseed dressing. Top the salad with the glazed salmon for a lighter option.
