- 8 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup strawberry pie filling
- 6 medium flour tortillas (8-inch)
- 3 tablespoons salted butter, melted
- 1 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
Instructions
- Prepare the cream cheese filling: In a medium bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the strawberry pie filling, creating swirls.
- Assemble the chimichangas: Warm tortillas if stiff. Spoon 2-3 tablespoons of filling onto one side of each tortilla. Fold in the sides and tightly roll up from the bottom edge.
- Prepare the cinnamon-sugar coating: In a small bowl, combine melted butter, granulated sugar, and cinnamon. Stir until well incorporated.
- Air fry the chimichangas: Preheat air fryer to 375°F (190°C). Lightly grease the basket. Place chimichangas in a single layer. Brush or spoon the cinnamon-sugar butter mixture over each one.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy. Remove from air fryer, let cool slightly before serving.
