- 2 cups fresh spinach
- 1 ½ cups whole-milk ricotta cheese
- 3 large eggs
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic
- ½ small onion
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- ½ teaspoon dried oregano
- fresh basil leaves
Instructions
- Heat olive oil in a pan over medium heat, cook onion until soft, then add garlic and spinach until wilted. Cool and squeeze out moisture.
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a bowl, whisk ricotta, eggs, Parmesan, and half mozzarella until smooth.
- Add salt, pepper, and nutmeg, mixing well.
- Fold in the spinach mixture gently.
- Transfer mixture to baking dish and spread evenly.
- Top with remaining mozzarella cheese.
- Toss cherry tomatoes with olive oil and oregano, then place on top.
- Bake for 35–40 minutes until golden and set.
- Let rest for 10–15 minutes before slicing.
- Garnish with fresh basil and serve.
