- 1 pound Sushi-Grade Salmon Fillet

- 2 tablespoons Sriracha Sauce
- 2 tablespoons Soy Sauce
- 1 tablespoon Toasted Sesame Oil
- 4 ounces Cream Cheese
- 1/4 cup Masago or Tobiko
- 2 stalks Green Onions
- 1 whole Avocados
- 1 package Roasted Seaweed Snacks or Nori Sheets
- 1 tablespoon Toasted Sesame Seeds
- to taste Extra Sriracha and Mayonnaise
- Furikake
- Pickled Ginger
- Wasabi
Instructions
- Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain and let it sit for about 30 minutes. Cook it in your rice cooker or on the stovetop with the correct water ratio until fluffy.
- In a small bowl, combine rice vinegar, granulated sugar, and sea salt. Once the rice is cooked, pour the seasoning mixture over it and fold gently while fanning to cool.
- Preheat your oven to 375°F (190°C). Bake sushi-grade salmon fillet for about 12-15 minutes until it flakes easily. Allow it to cool, then flake it into small pieces.
- In a bowl, combine mayonnaise, Sriracha sauce, soy sauce, and toasted sesame oil. Fold in the flaked salmon and optional garnishes.
- Grease a baking dish with neutral oil. Spread the prepared sushi rice evenly, pressing down lightly. Spread the spicy salmon mixture evenly on top.
- Bake until the top is golden brown, about 20-25 minutes. Broil for an extra 2-3 minutes for a crispy finish.
- Allow to cool briefly, drizzle with extra Sriracha and mayonnaise, and sprinkle with sesame seeds and green onions. Serve with roasted seaweed snacks.
