Ingredients

  • 3 medium Carrots
  • 4 cups Sweet potatoes
  • 6 cups Chicken broth or vegetable broth
  • 1/4 tsp Cinnamon
  • 1/8 tsp Ginger
  • 1/8 tsp Turmeric
  • 1 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. Heat the oil in a large pot, warm the olive oil over medium heat. Add the chopped onions and sauté until they turn soft and translucent, about 10 minutes.
  2. Sprinkle in the cinnamon, ginger, turmeric, salt, and pepper. Stir to coat the onions, and then add the carrots, sweet potatoes, and chicken broth. Bring to a gentle boil.
  3. Reduce heat to medium-low, cover, and simmer until vegetables are soft, about 25-30 minutes.
  4. Blend everything together using a hand blender until smooth and creamy, adjusting seasoning if desired.
  5. Serve in bowls, drizzled with heavy cream, optionally garnished with fresh herbs.
