- 1 medium Brown onion
- 3 medium Carrots
- 4 cups Sweet potatoes
- 6 cups Chicken broth or vegetable broth
- 1/4 tsp Cinnamon
- 1/8 tsp Ginger
- 1/8 tsp Turmeric
- 1 tsp Salt
- 1/4 tsp Pepper
Instructions
- Heat the oil in a large pot, warm the olive oil over medium heat. Add the chopped onions and sauté until they turn soft and translucent, about 10 minutes.
- Sprinkle in the cinnamon, ginger, turmeric, salt, and pepper. Stir to coat the onions, and then add the carrots, sweet potatoes, and chicken broth. Bring to a gentle boil.
- Reduce heat to medium-low, cover, and simmer until vegetables are soft, about 25-30 minutes.
- Blend everything together using a hand blender until smooth and creamy, adjusting seasoning if desired.
- Serve in bowls, drizzled with heavy cream, optionally garnished with fresh herbs.
