Southwest Chicken Quesadillas are a quick and delicious meal option that can be prepared in just 30 minutes.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tablespoon taco seasoning
- 4 large flour tortillas
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, cheese, bell peppers, onions, and taco seasoning.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and spread a portion of the chicken mixture on one half of the tortilla.
- Fold the tortilla over and cook for 3-4 minutes on each side until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve warm.
