Description

Southwest Chicken Quesadillas are a quick and delicious meal option that can be prepared in just 30 minutes.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, cheese, bell peppers, onions, and taco seasoning.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet and spread a portion of the chicken mixture on one half of the tortilla.
  4. Fold the tortilla over and cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  5. Repeat with the remaining tortillas and filling.
  6. Slice the quesadillas into wedges and serve warm.
