- 3/4 cup salted butter, softened (1 and 1/2 sticks)
- 4 ounces cream cheese, softened
- 1 and 1/2 cups granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 and 3/4 teaspoons almond extract
- 1 teaspoon salt
- 3 cups all-purpose flour, spooned and leveled
Instructions
- Ensure butter and cream cheese are softened (pliable but not melted).
- Cream softened butter and cream cheese in a large bowl until light and fluffy. Gradually add granulated sugar and beat until smooth and paler yellow, about 3-5 minutes.
- Beat in the egg until just combined. Add vanilla and almond extracts and beat until evenly distributed.
- In a separate bowl, whisk together flour and salt. Gradually add this dry mixture to the wet ingredients on low speed, mixing until just combined.
- Turn dough onto a lightly floured surface, gently bring it together, divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 375°F (190°C). Roll out chilled dough to 1/4-inch thickness on a lightly floured surface. Cut out shapes.
- Place cookies on prepared baking sheets, about 2 inches apart. Bake for 8-10 minutes, or until edges are lightly golden and centers appear soft.
- Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
