Ingredients

- 1 cup unsalted butter softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup marshmallow fluff or mini marshmallows
- 1/2 cup peanut butter chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract, mixing until combined.
- Mix in peanut butter until smooth.
- Gradually add dry ingredients into the wet mixture, mixing gently.
- Fold in marshmallow fluff or mini marshmallows and peanut butter chips.
- Scoop dough onto baking sheets, spacing evenly.
- Bake for 9–12 minutes until edges are golden and centers are soft.
- Let cookies cool for a few minutes before transferring to a wire rack.
