Description

A hands-off slow cooker French onion soup recipe that delivers rich, savory broth and tender caramelized onions topped with gooey, toasted Gruyère cheese.

  • 6 large yellow onions, thinly sliced (about ¼ inch thick)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil (extra virgin preferred)
  • 6 cups beef broth (1.4 liters)
  • ½ cup dry white wine (120 ml)
  • 3 garlic cloves, minced
  • 3 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper to taste
  • 8 slices baguette, about ½ inch thick (day-old or lightly toasted)
  • 2 cups shredded Gruyère cheese (200g)

Instructions

  1. Peel and thinly slice 6 large yellow onions about ¼ inch thick.
  2. Optional: Heat 2 tablespoons olive oil and 4 tablespoons butter in a large skillet over medium heat. Add onions and cook, stirring occasionally, until softened and golden, about 10-15 minutes.
  3. Transfer onions to slow cooker. Add minced garlic, ½ cup dry white wine, 6 cups beef broth, 3 sprigs fresh thyme, 2 bay leaves, and 1 tablespoon Worcestershire sauce. Stir to combine.
  4. Cook on low for 8 hours, allowing onions to caramelize and flavors to develop. Avoid lifting the lid frequently.
  5. After 8 hours, remove thyme sprigs and bay leaves. Taste and season with salt and pepper as needed. Preheat oven broiler and toast baguette slices on a baking sheet until golden, about 2-3 minutes per side.
  6. Ladle soup into oven-safe bowls. Place toasted baguette slices on top, then pile shredded Gruyère cheese generously over the bread.
  7. Place bowls on a baking sheet and broil until cheese is bubbly and golden brown, about 3-5 minutes. Watch closely to prevent burning.
  8. Carefully remove from oven and serve immediately.
