- 4 boneless skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes
- 3 cups fresh spinach
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh basil or parsley (optional)
Instructions
- Prepare the chicken by trimming excess fat and seasoning with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a skillet and sear the chicken for 2 to 3 minutes per side until lightly golden.
- Place the chicken in the slow cooker and add garlic and sun-dried tomatoes on top.
- Pour in the chicken broth and cover with the lid.
- Cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours until chicken is tender.
- Add heavy cream and Parmesan cheese about 20 to 30 minutes before serving.
- Stir gently, then add spinach during the last 10 to 15 minutes.
- Adjust seasoning, let the sauce thicken slightly, and serve warm.
