  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil or parsley (optional)

Instructions

  1. Prepare the chicken by trimming excess fat and seasoning with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a skillet and sear the chicken for 2 to 3 minutes per side until lightly golden.
  3. Place the chicken in the slow cooker and add garlic and sun-dried tomatoes on top.
  4. Pour in the chicken broth and cover with the lid.
  5. Cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours until chicken is tender.
  6. Add heavy cream and Parmesan cheese about 20 to 30 minutes before serving.
  7. Stir gently, then add spinach during the last 10 to 15 minutes.
  8. Adjust seasoning, let the sauce thicken slightly, and serve warm.
