These steak bites are inspired by Texas Roadhouse flavors, featuring tender, juicy steak cubes seared to perfection and coated in a rich garlic butter sauce. Quick and easy to make, perfect for a hearty weeknight dinner or party appetizer.

- 1 lb sirloin steak or ribeye, cut into 1-inch cubes
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: 1 teaspoon smoked paprika or chili powder
- 2 tablespoons olive oil or avocado oil
Instructions
- Cut steak into roughly 1-inch cubes, keeping pieces uniform. Season generously with salt and freshly ground black pepper. Let rest at room temperature for about 20 minutes.
- Heat a cast iron skillet or heavy-bottomed frying pan over medium-high heat. Add 2 tablespoons of olive oil and heat until almost smoking.
- Add steak cubes in a single layer without overcrowding. Sear undisturbed for 2-3 minutes until a deep brown crust forms. Flip and sear the other side for another 2-3 minutes, cooking to medium-rare or desired doneness.
- Reduce heat to medium. Push steak to one side of the pan. Add butter and minced garlic to the empty side. Stir garlic until fragrant, about 30 seconds, without burning.
- Add fresh thyme leaves and optional smoked paprika or chili powder. Toss steak cubes in the garlic butter sauce to coat evenly.
- Transfer steak bites to a plate and let rest for 5 minutes to allow juices to redistribute before serving.
