These steak bites are inspired by Texas Roadhouse flavors, featuring tender, juicy steak cubes seared to perfection and coated in a rich garlic butter sauce. Quick and easy to make, perfect for a hearty weeknight dinner or party appetizer.

  • 1 lb sirloin steak or ribeye, cut into 1-inch cubes
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 teaspoon smoked paprika or chili powder
  • 2 tablespoons olive oil or avocado oil

Instructions

  1. Cut steak into roughly 1-inch cubes, keeping pieces uniform. Season generously with salt and freshly ground black pepper. Let rest at room temperature for about 20 minutes.
  2. Heat a cast iron skillet or heavy-bottomed frying pan over medium-high heat. Add 2 tablespoons of olive oil and heat until almost smoking.
  3. Add steak cubes in a single layer without overcrowding. Sear undisturbed for 2-3 minutes until a deep brown crust forms. Flip and sear the other side for another 2-3 minutes, cooking to medium-rare or desired doneness.
  4. Reduce heat to medium. Push steak to one side of the pan. Add butter and minced garlic to the empty side. Stir garlic until fragrant, about 30 seconds, without burning.
  5. Add fresh thyme leaves and optional smoked paprika or chili powder. Toss steak cubes in the garlic butter sauce to coat evenly.
  6. Transfer steak bites to a plate and let rest for 5 minutes to allow juices to redistribute before serving.
