- 1 lb ground beef (80/20)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 14 oz canned diced tomatoes (no-salt-added preferred)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 can kidney or black beans, drained and rinsed (optional)
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika (smoked preferred)
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional toppings: shredded cheddar, sour cream, chopped green onions, fresh cilantro, sliced jalapeños
Instructions
- Preheat a large pot over medium heat and add 2 tablespoons olive oil. Dice onion, mince garlic, and chop bell peppers while heating.
- Add onion and bell peppers to the pot. Cook, stirring often, until soft and slightly caramelized, about 5-7 minutes. Add garlic for the last minute.
- Increase heat to medium-high and add ground beef. Break apart and cook until no pink remains and beef is browned, about 6-8 minutes. Drain excess fat if needed.
- Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper over the beef mixture. Stir and toast spices for 1-2 minutes until fragrant.
- Add canned diced tomatoes, tomato paste, and beef broth. Stir well to combine and dissolve tomato paste.
- Reduce heat to low and simmer uncovered for 30-40 minutes, stirring every 10 minutes. Add more broth or water if chili becomes too thick.
- About 5 minutes before serving, stir in drained beans and warm through without overcooking.
- Taste and adjust seasoning with salt, pepper, or chili powder as needed. Serve with optional toppings.
