  • 1 lb ground beef (80/20)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 14 oz canned diced tomatoes (no-salt-added preferred)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 can kidney or black beans, drained and rinsed (optional)
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika (smoked preferred)
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional toppings: shredded cheddar, sour cream, chopped green onions, fresh cilantro, sliced jalapeños

Instructions

  1. Preheat a large pot over medium heat and add 2 tablespoons olive oil. Dice onion, mince garlic, and chop bell peppers while heating.
  2. Add onion and bell peppers to the pot. Cook, stirring often, until soft and slightly caramelized, about 5-7 minutes. Add garlic for the last minute.
  3. Increase heat to medium-high and add ground beef. Break apart and cook until no pink remains and beef is browned, about 6-8 minutes. Drain excess fat if needed.
  4. Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper over the beef mixture. Stir and toast spices for 1-2 minutes until fragrant.
  5. Add canned diced tomatoes, tomato paste, and beef broth. Stir well to combine and dissolve tomato paste.
  6. Reduce heat to low and simmer uncovered for 30-40 minutes, stirring every 10 minutes. Add more broth or water if chili becomes too thick.
  7. About 5 minutes before serving, stir in drained beans and warm through without overcooking.
  8. Taste and adjust seasoning with salt, pepper, or chili powder as needed. Serve with optional toppings.
