  • 1 lb Chorizo Sausage (Fresh Mexican chorizo recommended)
  • 2 tbsp Flour (Essential to cook briefly)
  • 2 cups Whole Milk (Can substitute with low-fat milk)
  • 1 tsp Garlic Powder (Adjust quantity to taste)
  • 1 tsp Onion Powder (Can be omitted or adjusted based on preference)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. Using a pastry cutter or your fingers, cut the cold unsalted butter into the flour mixture until it resembles coarse crumbs.
  4. Create a well in the center, pour in the buttermilk, and gently stir until just combined.
  5. Turn the dough onto a floured surface and knead it gently about 5-6 times, then pat it down until it’s about 1-inch thick.
  6. Cut out your biscuits using a biscuit cutter and place them on a parchment-lined baking sheet.
  7. Slide the baking sheet into the oven and bake for 12-15 minutes, until golden brown.
  8. In a skillet over medium heat, crumble the chorizo and cook until browned, about 5-7 minutes.
  9. Sprinkle flour over the cooked chorizo and stir well for 1-2 minutes, then gradually whisk in the whole milk.
  10. Continue cooking the gravy until it thickens, around 5-7 minutes, and season with garlic powder, onion powder, salt, and pepper to taste.
  11. Split the biscuits in half, ladle the chorizo gravy over the top, and garnish with fresh parsley.
