Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- Using a pastry cutter or your fingers, cut the cold unsalted butter into the flour mixture until it resembles coarse crumbs.
- Create a well in the center, pour in the buttermilk, and gently stir until just combined.

- Cut out your biscuits using a biscuit cutter and place them on a parchment-lined baking sheet.
- Slide the baking sheet into the oven and bake for 12-15 minutes, until golden brown.
- In a skillet over medium heat, crumble the chorizo and cook until browned, about 5-7 minutes.
- Sprinkle flour over the cooked chorizo and stir well for 1-2 minutes, then gradually whisk in the whole milk.
- Continue cooking the gravy until it thickens, around 5-7 minutes, and season with garlic powder, onion powder, salt, and pepper to taste.
- Split the biscuits in half, ladle the chorizo gravy over the top, and garnish with fresh parsley.
