Tender, juicy baked chicken topped with a crispy feta crust and sweet, smoky roasted peppers, perfect for an easy yet impressive dinner.

- 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
- 1 cup crumbled feta cheese (150g), preferably block feta
- 1 cup sliced roasted red peppers (150g), jarred or homemade
- 3 tbsp olive oil (extra virgin preferred)
- 3 garlic cloves, minced
- 2 tbsp fresh squeezed lemon juice
- 1 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- Optional: 2 tbsp chopped fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish with 1 tbsp olive oil.
- Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and half of the dried oregano.
- In a mixing bowl, combine crumbled feta, minced garlic, remaining oregano, 2 tbsp olive oil, and 1 tbsp lemon juice. Stir until crumbly and oily.
- Spread sliced roasted peppers evenly in the bottom of the baking dish. Place seasoned chicken breasts on top.
- Spoon the feta mixture generously over each chicken breast, pressing lightly to adhere.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and feta topping is golden and crispy. Tent with foil if topping browns too fast.
- Remove from oven, drizzle remaining 1 tbsp lemon juice over chicken, and sprinkle with fresh parsley if using.
- Let rest for 5 minutes before slicing and serving.
