Savory Baked Chicken with Crispy Feta and Roasted Peppers

Description

Tender, juicy baked chicken topped with a crispy feta crust and sweet, smoky roasted peppers, perfect for an easy yet impressive dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 1 cup crumbled feta cheese (150g), preferably block feta
  • 1 cup sliced roasted red peppers (150g), jarred or homemade
  • 3 tbsp olive oil (extra virgin preferred)
  • 3 garlic cloves, minced
  • 2 tbsp fresh squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Optional: 2 tbsp chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish with 1 tbsp olive oil.
  2. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and half of the dried oregano.
  3. In a mixing bowl, combine crumbled feta, minced garlic, remaining oregano, 2 tbsp olive oil, and 1 tbsp lemon juice. Stir until crumbly and oily.
  4. Spread sliced roasted peppers evenly in the bottom of the baking dish. Place seasoned chicken breasts on top.
  5. Spoon the feta mixture generously over each chicken breast, pressing lightly to adhere.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and feta topping is golden and crispy. Tent with foil if topping browns too fast.
  7. Remove from oven, drizzle remaining 1 tbsp lemon juice over chicken, and sprinkle with fresh parsley if using.
  8. Let rest for 5 minutes before slicing and serving.
