  • 2 medium zucchinis, sliced
  • 1 cup cooked rice or cauliflower rice (200g)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet and cook sausage until browned.
  2. Add diced onion and garlic, cook until fragrant. Stir in zucchini and cook until slightly tender.
  3. Cook rice or cauliflower rice according to instructions.
  4. Preheat oven to 375°F (190°C). In a baking dish, combine sausage mixture, rice, heavy cream, and half of the cheese.
