- 1 lb sausage (450g)
- 2 medium zucchinis, sliced
- 1 cup cooked rice or cauliflower rice (200g)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet and cook sausage until browned.
- Add diced onion and garlic, cook until fragrant. Stir in zucchini and cook until slightly tender.
- Cook rice or cauliflower rice according to instructions.
- Preheat oven to 375°F (190°C). In a baking dish, combine sausage mixture, rice, heavy cream, and half of the cheese.
- Top with remaining cheese and bake for 20–25 minutes until bubbly and golden.
- Let cool slightly before serving.
