- 1 cup lightly crushed cornflakes (optional for extra crunch)
- ½ cup chopped nuts (almonds, peanuts, or pecans – optional)
- 1 cup granulated sugar
- 6 tbsp unsalted butter (cubed)
- ½ cup heavy cream (room temperature)
- 1 tsp vanilla extract
- ¾ tsp fine sea salt (plus extra flaky salt for topping)
Instructions
- Prepare the Base
- Line a baking tray with parchment paper.
- In a large bowl, combine rice cereal, cornflakes, and nuts if using.
- Set aside.
- Make the Caramel
- In a heavy saucepan, heat sugar over medium heat.
- Let it melt slowly, stirring occasionally, until it becomes a deep amber liquid.
- Add butter carefully and whisk until fully melted.
- Slowly pour in heavy cream (it will bubble), whisking continuously.
- Cook 1–2 minutes until smooth and slightly thickened.
- Remove from heat and stir in vanilla and salt.
- Coat the Crackle
- Immediately pour the hot caramel over the cereal mixture.
- Stir quickly to coat everything evenly.
- Shape & Set
- Spread the mixture onto the prepared tray.
- Flatten slightly or leave in rustic clusters.
- Sprinkle flaky sea salt on top.
- Cool
- Let it cool completely (about 30 minutes) until crisp.
- Break into chunks or clusters.
