- 24 ounces Cauliflower Rice
- 2 Green Onions
- 2 cloves Garlic
- 4 ounces Diced Green Chiles
- 1/2 cup Canned Black Beans
- 1/4 cup Chopped Cilantro
- 1 cup Salsa
- 1/2 cup Shredded Cheddar or Monterey Jack Cheese
Instructions
- Combine the chili powder, cumin, and smoked paprika in a small bowl. Rub half of this spice mix over the chicken breasts, then season with kosher salt and pepper.
- Heat a 12-inch skillet over medium heat, adding a drizzle of olive oil. Cook the chicken breasts for about 6-7 minutes on each side until golden brown and juices run clear. Remove and keep warm.
- In the same skillet, add more olive oil if needed. Sauté the cauliflower rice, sliced green onions, and minced garlic for 10-12 minutes until tender and golden.
- Stir in the salsa, black beans, green chiles, and cilantro. Heat through for 3-5 minutes, allowing the flavors to meld.
- Nestle the cooked chicken back in the skillet, topping with salsa and cheese. Cover and cook for 3-5 minutes until cheese is melted.
- Cool slightly, garnish with cilantro and green onions if desired, and serve family-style.
