Description

A hearty and comforting Russian egg noodle dish featuring tender noodles enveloped in a rich, savory beef gravy, perfect for a satisfying meal.

Ingredients

Scale
  • 1.5 lbs beef chuck, cut into small cubes
  • 2 tablespoons sunflower oil
  • 1 large yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 teaspoon Worcestershire sauce
  • 3 cups all-purpose flour, sifted (for noodles)
  • 3 large eggs (for noodles)
  • 1 tablespoon water (if needed for noodles)
  • 1 teaspoon salt (for noodles)
  • Fresh parsley, chopped (optional garnish)
  • Sour cream (optional garnish)

Instructions

  1. Prepare the Beef Gravy: Heat sunflower oil in a Dutch oven over medium-high heat. Brown beef cubes in batches, then set aside.
  2. Sauté onions in the same pot until translucent, about 5-7 minutes. Add garlic and cook for 1 minute.
  3. Stir in tomato paste and flour. Cook for 2-3 minutes.
  4. Gradually add beef broth, whisking to avoid lumps. Return beef to the pot.
  5. Add paprika, Worcestershire sauce, bay leaf, salt, and pepper.
  6. Cover and simmer on low heat for 1.5 hours, or until beef is tender and gravy has thickened.
  7. Make the Russian Egg Noodles: On a clean surface, make a well in the sifted flour. Crack eggs into the center and add salt.
  8. Gradually incorporate flour into eggs using a fork. Knead for 10 minutes until dough is smooth.
  9. Cover dough and let rest for 30 minutes.
  10. Roll out dough to 1/8 inch thick. Slice into ½-inch wide strips.
  11. Cook noodles in salted boiling water for 5-7 minutes until tender. Drain.
  12. Assemble and Serve: Add cooked noodles to the beef gravy, stirring gently to coat.
  13. Garnish with fresh parsley and sour cream if desired.

Notes

  • You can use store-bought wide egg noodles or tagliatelle if making noodles from scratch is not feasible.
  • Sunflower oil is commonly used in traditional Russian cooking.
  • The Worcestershire sauce is not traditional but deepens the umami flavor.
  • These handmade noodles are a great way to showcase the tradition of making Russian noodles from scratch.
  • Pair with a simple cucumber and dill salad or black rye bread.
