Instructions
- Prepare the Beef Gravy: Heat sunflower oil in a Dutch oven over medium-high heat. Brown beef cubes in batches, then set aside.
- Sauté onions in the same pot until translucent, about 5-7 minutes. Add garlic and cook for 1 minute.
- Stir in tomato paste and flour. Cook for 2-3 minutes.
- Gradually add beef broth, whisking to avoid lumps. Return beef to the pot.
- Add paprika, Worcestershire sauce, bay leaf, salt, and pepper.
- Cover and simmer on low heat for 1.5 hours, or until beef is tender and gravy has thickened.
- Make the Russian Egg Noodles: On a clean surface, make a well in the sifted flour. Crack eggs into the center and add salt.
- Gradually incorporate flour into eggs using a fork. Knead for 10 minutes until dough is smooth.
- Cover dough and let rest for 30 minutes.
- Roll out dough to 1/8 inch thick. Slice into ½-inch wide strips.
- Cook noodles in salted boiling water for 5-7 minutes until tender. Drain.
- Assemble and Serve: Add cooked noodles to the beef gravy, stirring gently to coat.
- Garnish with fresh parsley and sour cream if desired.
