Description
Roasted strawberries are a great way to preserve the flavors of summer. The roasting process concentrates the sweet and tart flavors of the berries.
Ingredients

- 500 grams strawberries (about 1 heaping pint of strawberries)
- 1/4 cup (50g) granulated sugar
- pinch of salt
Instructions
- Preheat the oven to 250ºF (120ºC). Position an oven rack to the center.
- Rinse and hull the strawberries. Leave small strawberries whole. Slice medium-sized strawberries in half and larger ones into quarters.
- If using an aluminum sheet pan, no need to line it. If using a darker pan, feel free to line with parchment paper. Add sliced strawberries to the baking sheet. Sprinkle sugar and salt over them. Toss until all sugar is moistened.
- Slide the baking sheet into the oven and bake for 1 hour.
- After an hour, give the sheet a quick shake. The syrup should be watery. Add strawberries back to the oven and bake for another 45 minutes.
- Check the strawberries. They should be darker and softened. Gently toss with the syrup. Check the syrup consistency. It should coat the back of a spoon. If watery, continue roasting at 15-minute intervals.
- Let the roasted strawberries cool for 5 minutes before transferring to a container. They will keep in the fridge for 5 to 6 days.
