Roasted Strawberries: 5 Sweet Ways to Savor Them

Description

Roasted strawberries are a great way to preserve the flavors of summer. The roasting process concentrates the sweet and tart flavors of the berries.


Ingredients

  • 500 grams strawberries (about 1 heaping pint of strawberries)
  • 1/4 cup (50g) granulated sugar
  • pinch of salt

Instructions

  1. Preheat the oven to 250ºF (120ºC). Position an oven rack to the center.
  2. Rinse and hull the strawberries. Leave small strawberries whole. Slice medium-sized strawberries in half and larger ones into quarters.
  3. If using an aluminum sheet pan, no need to line it. If using a darker pan, feel free to line with parchment paper. Add sliced strawberries to the baking sheet. Sprinkle sugar and salt over them. Toss until all sugar is moistened.
  4. Slide the baking sheet into the oven and bake for 1 hour.
  5. After an hour, give the sheet a quick shake. The syrup should be watery. Add strawberries back to the oven and bake for another 45 minutes.
  6. Check the strawberries. They should be darker and softened. Gently toss with the syrup. Check the syrup consistency. It should coat the back of a spoon. If watery, continue roasting at 15-minute intervals.
  7. Let the roasted strawberries cool for 5 minutes before transferring to a container. They will keep in the fridge for 5 to 6 days.
