- 4 tablespoons Goat Cheese (chevre) (Crumbled and at room temperature; feta is a good substitute.)
- 2 tablespoons Olive Oil (Feel free to use avocado oil as an alternative.)
- 2 tablespoons Lemon Juice (Or apple cider vinegar.)
- 1 clove Garlic (Minced or grated.)
- 1 teaspoon Dijon Mustard (Consider whole-grain mustard for adventure!)
- 1 teaspoon Grainy Mustard (Dijon alone is effective if necessary.)
Instructions
- Preheat your oven to 400°F (200°C). Wash and cut the potatoes into wedges. Toss with olive oil, salt, and pepper.
- Spread the seasoned potato wedges on a baking sheet. Roast for approximately 35 minutes, flipping halfway through.
- In a medium bowl, combine goat cheese, olive oil, lemon juice, minced garlic, Dijon mustard, and grainy mustard. Whisk until smooth.
- Transfer the roasted potatoes to the bowl with the dressing. Toss gently to coat the potatoes in the creamy dressing.
- Serve immediately on a platter, optionally garnished with extra goat cheese.
