  • 2 tablespoons Lemon Juice (Or apple cider vinegar.)
  • 1 clove Garlic (Minced or grated.)
  • 1 teaspoon Dijon Mustard (Consider whole-grain mustard for adventure!)
  • 1 teaspoon Grainy Mustard (Dijon alone is effective if necessary.)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and cut the potatoes into wedges. Toss with olive oil, salt, and pepper.
  2. Spread the seasoned potato wedges on a baking sheet. Roast for approximately 35 minutes, flipping halfway through.
  3. In a medium bowl, combine goat cheese, olive oil, lemon juice, minced garlic, Dijon mustard, and grainy mustard. Whisk until smooth.
