  • 1 head of garlic
  • 8 ounces goat cheese, softened
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon fresh thyme leaves (optional)
  • Salt and freshly ground black pepper to taste
  • Baguette slices or crackers for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top 1/4 inch of the garlic head, exposing the cloves. Place the garlic head on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil.
  3. Wrap the garlic tightly in the foil and roast for 40-50 minutes, or until the cloves are soft and golden brown.
  4. Let the roasted garlic cool slightly. Squeeze the softened cloves out of their skins into a small bowl.
  5. In a medium bowl, combine the softened goat cheese and the roasted garlic cloves. Mash with a fork until well combined.
  6. Stir in the remaining 1 tablespoon of olive oil and fresh thyme leaves (if using).
  7. Season with salt and freshly ground black pepper to taste.
