Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and optional nutmeg to combine.
  3. In another bowl, beat the eggs, vegetable oil, sugar, and vanilla extract until smooth and well combined.
  4. Gently fold the dry ingredients into the wet mixture until just combined, taking care not to overmix.
  5. Fold in the grated zucchini and chopped apple. If using, add the chopped nuts.
  6. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
