Description
Polish Gnocchi Stir Fry combines smoky kielbasa and buttery gnocchi for a quick, comforting dinner.

- 1 lb Smoked Polish Kielbasa
- 3 to 4 cups Gnocchi
- 6 tbsp Butter
- 1/2 tbsp Caraway Seeds
- 1 medium Yellow Onion
- 3 cloves Garlic
- 1 can (14.5 oz) Sauerkraut
- 1 cup Chicken Broth
- 1/2 tbsp Grainy Mustard
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
- 2 tsp Salt
- Fresh Parsley or Dried Dill
Instructions
- In a large skillet over medium heat, melt 1 tablespoon of butter. Add the caraway seeds and toast them for 2-3 minutes, or until fragrant and lightly browned. Remove the seeds from the skillet and set them aside for later.
- In the same skillet, add 2 tablespoons of butter and heat over medium-low. Finely dice the yellow onion and add it along with minced garlic. Sauté for about 5-7 minutes until the onions are soft and translucent.
- Drain the can of sauerkraut well. Add the sauerkraut into the skillet with the sautéed onions and garlic. Stir gently and cook for an additional 3-4 minutes until heated through and slightly browned.
- Slice the smoked Polish kielbasa into 1/4 inch thick pieces. Add to the skillet, and sauté for about 5-6 minutes until it begins to brown and release its juices.
- Pour in the chicken broth along with the grainy mustard, salt, and black pepper. Stir well and bring to a gentle simmer for 3-4 minutes.
- Gently stir in the gnocchi, ensuring they’re well coated with the broth mixture. Cover the skillet and simmer for 5-7 minutes until the gnocchi becomes tender.
- Uncover and continue to sauté for an additional 2-3 minutes until most of the liquid evaporates and a rich sauce has formed. Stir in the reserved toasted caraway seeds and remaining butter.
- Serve the Polish Gnocchi Stir Fry hot, optionally garnished with fresh parsley or dried dill.
