  • 1 lb Smoked Polish Kielbasa
  • 3 to 4 cups Gnocchi
  • 6 tbsp Butter
  • 1/2 tbsp Caraway Seeds
  • 1 medium Yellow Onion
  • 3 cloves Garlic
  • 1 can (14.5 oz) Sauerkraut
  • 1 cup Chicken Broth
  • 1/2 tbsp Grainy Mustard
  • 1 tsp Black Pepper
  • 1/2 tsp White Pepper
  • 2 tsp Salt
  • Fresh Parsley or Dried Dill

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the caraway seeds and toast them for 2-3 minutes, or until fragrant and lightly browned. Remove the seeds from the skillet and set them aside for later.
  2. In the same skillet, add 2 tablespoons of butter and heat over medium-low. Finely dice the yellow onion and add it along with minced garlic. Sauté for about 5-7 minutes until the onions are soft and translucent.
  3. Drain the can of sauerkraut well. Add the sauerkraut into the skillet with the sautéed onions and garlic. Stir gently and cook for an additional 3-4 minutes until heated through and slightly browned.
  4. Slice the smoked Polish kielbasa into 1/4 inch thick pieces. Add to the skillet, and sauté for about 5-6 minutes until it begins to brown and release its juices.
  5. Pour in the chicken broth along with the grainy mustard, salt, and black pepper. Stir well and bring to a gentle simmer for 3-4 minutes.
  6. Gently stir in the gnocchi, ensuring they’re well coated with the broth mixture. Cover the skillet and simmer for 5-7 minutes until the gnocchi becomes tender.
  7. Uncover and continue to sauté for an additional 2-3 minutes until most of the liquid evaporates and a rich sauce has formed. Stir in the reserved toasted caraway seeds and remaining butter.
  8. Serve the Polish Gnocchi Stir Fry hot, optionally garnished with fresh parsley or dried dill.
