- 4 pieces Chicken Drumsticks (Opt for organic or free-range for best flavor.)
- 4 cups Water (Essential for poaching the chicken.)
- 1 piece Ginger (Use fresh for maximum flavor.)
- 3 pieces Scallions (Use whites for frying, greens for garnish.)
- 1/4 cup Light Soy Sauce (Substitute with tamari for gluten-free.)
- 1 teaspoon Sugar (Can be omitted or replaced with healthier alternative.)
- 1 tablespoon Vegetable Oil (Required for frying scallion whites.)
Instructions
- In a medium pot, bring 4 cups of water to a rolling boil. Add 3 slices of fresh ginger and 1 sliced scallion.
- Gently add the chicken drumsticks to the pot and bring back to a simmer, cover, and cook for 10 minutes.
- Remove from heat and let sit covered for another 15 minutes.
- Transfer the chicken to a bowl of ice water for 5 minutes.
- Heat vegetable oil in a frying pan over medium heat and sauté the chopped scallion whites until crispy and golden.
- In the same pan, combine reserved poaching liquid, soy sauce, sugar, and scallion greens; bring to a boil for 2-3 minutes.
- Shred the chicken and drizzle the sauce over before serving.

- Use leftover poaching liquid as a soup base.
- Can be stored in the refrigerator for up to 3 days.
