  • 1/4 cup Light Soy Sauce (Substitute with tamari for gluten-free.)
  • 1 teaspoon Sugar (Can be omitted or replaced with healthier alternative.)
  • 1 tablespoon Vegetable Oil (Required for frying scallion whites.)

Instructions

  1. In a medium pot, bring 4 cups of water to a rolling boil. Add 3 slices of fresh ginger and 1 sliced scallion.
  2. Gently add the chicken drumsticks to the pot and bring back to a simmer, cover, and cook for 10 minutes.
  3. Remove from heat and let sit covered for another 15 minutes.
  4. Transfer the chicken to a bowl of ice water for 5 minutes.
  5. Heat vegetable oil in a frying pan over medium heat and sauté the chopped scallion whites until crispy and golden.
  6. In the same pan, combine reserved poaching liquid, soy sauce, sugar, and scallion greens; bring to a boil for 2-3 minutes.
  7. Shred the chicken and drizzle the sauce over before serving.
